8 Red chilies, dried
3 Scallions

1 tsp Hoisin sauce
1 1/3 tbsp Soy sauce

2 1/2 tsp Cornstarch
1/2 tsp Sichuan pepper, ground
2 tsp Sugar

Oils & Vinegars

1 tbsp Chinese black vinegar
2 tbsp Peanut or vegetable oil
1 tsp Sesame oil

2 tsp Chinese rice wine or dry sherry
