Red Lentil and Quinoa Soup by simpleawesomecooking: Both lentils and quinoa are used in a classic Peruvian soup, menestra de lentajes, that may also include ginger, coconut milk or bacon. 1 cup Carrot

2 tbsp Cilantro
1 cup Onion
1 cup Red bell pepper
1 cup Red lentils
