Thai Peanut Quinoa Salad | Cooking Classy - vegetarian recipe but can also be made with a protein. This salad is easy and delicious!

Vegan Gluten free Serves 5-6

Produce

8 oz Bean sprouts
1 cup Cilantro, fresh
1 Cucumber
4 cloves Garlic
2 tsp Ginger, ground
4 Green onions
2 cups Matchstick carrots
2 tsp Onion powder
1 cup Peanuts, dry roasted unsalted or lightly salted
3 cups Red cabbage

Condiments

1/2 cup Agave nectar
1/4 cup Lime juice, fresh
1/2 cup Peanut butter, creamy
1/2 cup Soy sauce, low-sodium
2 tbsp Sriracha hot sauce

Pasta & Grains

2 cups Quinoa, dry

Oils & Vinegars

1/4 cup Rice vinegar
4 tsp Sesame oil
